Instructions
Preheat your oven to 350°F (175°C).
Spread the sugar cookie dough evenly on a greased sheet pan to form a large rectangle.
Bake the cookie crust for 12-15 minutes or until golden brown. Let it cool completely.
In a mixing bowl, combine the softened cream cheese, powdered sugar, and vanilla extract. Beat until smooth and creamy.
Fold in the whipped topping until well combined.
Spread the cream cheese mixture evenly over the cooled cookie crust.
Arrange the sliced strawberries, blueberries, kiwi, and pineapple chunks on top of the cream cheese layer in a decorative pattern.
Chill the fruit pizza in the refrigerator for at least 30 minutes before serving.
Garnish with fresh mint leaves if desired, slice, and enjoy!
