  • In a mixing bowl, beat the softened cream cheese until smooth.
  • Add the powdered sugar and vanilla extract to the cream cheese and mix until well combined.
  • Fold in the whipped topping gently until the mixture is fluffy and smooth.
  • In a large serving bowl, layer half of the sliced strawberries on the bottom.
  • Spread half of the cheesecake mixture over the strawberries.
  • Add half of the blueberries on top of the cheesecake layer.
  • Repeat the layering with the remaining strawberries, cheesecake mixture, and blueberries.
  • Sprinkle granola on top of the final layer for added crunch.
  • Garnish with fresh mint leaves before serving.
  • Serve immediately or refrigerate for up to 2 hours before serving.

Notes

For a lighter version, use low-fat cream cheese and whipped topping.
