Heat a large skillet over medium-high heat. Add the sesame oil, then add the ground beef and cook until browned, breaking it up into small pieces with a spatula (about 5-7 minutes). Drain excess grease if necessary.
In a small bowl, whisk together soy sauce, brown sugar, minced garlic, grated ginger, and crushed red pepper flakes (if using).
Pour the sauce mixture over the cooked beef in the skillet. Stir to combine and let it simmer for 2-3 minutes to absorb the flavors.
If you prefer a thicker sauce, mix the cornstarch with water in a small bowl to create a slurry. Pour the slurry into the skillet and stir until the sauce thickens (about 1-2 minutes).
Remove the skillet from heat and prepare your serving bowls. Divide the cooked rice evenly among bowls.
Top the rice with the seasoned ground beef, shredded carrots, and chopped green onions.
Sprinkle sesame seeds on top for garnish (optional). Serve immediately and enjoy!
Notes
You can substitute ground turkey or chicken for the beef. Adjust the spice level by adding more or less crushed red pepper flakes.
