Place the chicken breasts in a slow cooker or large pot.
In a bowl, mix together the BBQ sauce, chicken broth, honey, smoked paprika, garlic powder, onion powder, salt, and black pepper until well combined.
Pour the sauce mixture over the chicken breasts, ensuring they are fully coated.
If using a slow cooker, set to low heat and cook for 6-7 hours, or on high heat for 3-4 hours. If using a pot on the stove, cover and simmer on low heat for 1.5 to 2 hours, checking occasionally to ensure the liquid doesn’t evaporate completely.
Once the chicken is fully cooked and tender, remove it from the pot or slow cooker and place it on a cutting board.
Using two forks, shred the chicken into small pieces.
Return the shredded chicken to the sauce in the pot or slow cooker. Mix well to coat the chicken evenly with the BBQ sauce.
Serve warm as a sandwich filling, on top of a salad, or with roasted vegetables. Garnish with chopped parsley if desired.
Notes
For a spicier version, add a pinch of cayenne pepper to the sauce mixture. Ensure all ingredients are halal-certified if following dietary restrictions.
