Instructions
Preheat your oven to 350°F (175°C).
Roll out the gluten-free sugar cookie dough on a piece of parchment paper to fit a large pizza pan or baking sheet.
Transfer the rolled-out dough onto the pizza pan and bake for 12-15 minutes, or until lightly golden. Let cool completely.
In a mixing bowl, combine the softened cream cheese, powdered sugar, and vanilla extract. Beat until smooth and creamy.
Spread the cream cheese mixture evenly over the cooled cookie crust.
Arrange the sliced strawberries in the shape of stripes on the left side of the pizza to represent the red stripes of the flag.
Place the blueberries in the top left corner to form the blue field of stars.
Use the banana slices to create alternating white stripes next to the strawberries.
If desired, heat the raspberry jam gently and brush it over the fruit for a shiny glaze.
Garnish with fresh mint leaves for a pop of color and serve chilled.
Notes
For a sweeter glaze, use more raspberry jam.
