Ingredients
  

  • 1 gluten-free sugar cookie dough store-bought or homemade
  • 8 oz cream cheese softened
  • 1/4 cup powdered sugar
  • 1 tsp vanilla extract
  • 1 cup strawberries hulled and sliced
  • 1 cup blueberries
  • 1 banana sliced
  • 1/4 cup raspberry jam optional, for glaze
  • Fresh mint leaves for garnish, optional

Instructions
 

  • Preheat your oven to 350°F (175°C).
  • Roll out the gluten-free sugar cookie dough on a piece of parchment paper to fit a large pizza pan or baking sheet.
  • Transfer the rolled-out dough onto the pizza pan and bake for 12-15 minutes, or until lightly golden. Let cool completely.
  • In a mixing bowl, combine the softened cream cheese, powdered sugar, and vanilla extract. Beat until smooth and creamy.
  • Spread the cream cheese mixture evenly over the cooled cookie crust.
  • Arrange the sliced strawberries in the shape of stripes on the left side of the pizza to represent the red stripes of the flag.
  • Place the blueberries in the top left corner to form the blue field of stars.
  • Use the banana slices to create alternating white stripes next to the strawberries.
  • If desired, heat the raspberry jam gently and brush it over the fruit for a shiny glaze.
  • Garnish with fresh mint leaves for a pop of color and serve chilled.

Notes

For a sweeter glaze, use more raspberry jam.
