1/2cuphalal beef sausagesliced into rounds (or turkey sausage as an alternative)
Instructions
Start by preparing your ingredients: wash and halve the potatoes, chop the onion and bell pepper, and slice the halal beef sausage.
In a large mixing bowl, combine the potatoes, onion, bell pepper, olive oil, garlic powder, smoked paprika, black pepper, and salt. Mix well to coat the vegetables evenly.
Grease your crock pot with a bit of olive oil or cooking spray to prevent sticking.
Layer half of the potato mixture into the crock pot, then add half of the sliced halal beef sausage on top.
Sprinkle half of the shredded cheddar cheese and mozzarella cheese over the sausage and potatoes.
Repeat the layers with the remaining potato mixture, sausage, and cheese.
Cover the crock pot and cook on high for 4 hours or on low for 7 hours, until the potatoes are tender and cooked through.
Once cooking is complete, stir in the sour cream and sprinkle the chopped parsley on top for garnish.
Serve hot as a hearty side dish or a standalone meal.
Notes
You can substitute turkey sausage for halal beef sausage if preferred. Adjust seasoning to taste.
