  • Start by preparing your ingredients: wash and halve the potatoes, chop the onion and bell pepper, and slice the halal beef sausage.
  • In a large mixing bowl, combine the potatoes, onion, bell pepper, olive oil, garlic powder, smoked paprika, black pepper, and salt. Mix well to coat the vegetables evenly.
  • Grease your crock pot with a bit of olive oil or cooking spray to prevent sticking.
  • Layer half of the potato mixture into the crock pot, then add half of the sliced halal beef sausage on top.
  • Sprinkle half of the shredded cheddar cheese and mozzarella cheese over the sausage and potatoes.
  • Repeat the layers with the remaining potato mixture, sausage, and cheese.
  • Cover the crock pot and cook on high for 4 hours or on low for 7 hours, until the potatoes are tender and cooked through.
  • Once cooking is complete, stir in the sour cream and sprinkle the chopped parsley on top for garnish.
  • Serve hot as a hearty side dish or a standalone meal.

Notes

You can substitute turkey sausage for halal beef sausage if preferred. Adjust seasoning to taste.
