  • Bring a large pot of salted water to a boil and cook the penne pasta according to package instructions. Drain and set aside.
  • In a large skillet, heat olive oil over medium heat. Add the sliced smoked sausage and cook until browned, about 3-4 minutes per side. Remove from the skillet and set aside.
  • Add the diced onion and red bell pepper to the same skillet. Sauté until softened, about 5 minutes.
  • Stir in the minced garlic, Cajun seasoning, paprika, and cayenne pepper. Cook for 1 minute, until fragrant.
  • Pour in the heavy cream and chicken broth, stirring to combine. Bring the mixture to a simmer and cook for 3-4 minutes to slightly thicken.
  • Add the grated Parmesan cheese and stir until melted and smooth. Season with salt and black pepper to taste.
  • Return the cooked sausage to the skillet and stir to coat in the sauce.
  • Add the cooked pasta to the skillet and toss to combine, ensuring the pasta is evenly coated in the creamy sauce.
  • Remove from heat and garnish with sliced green onions.
  • Serve immediately and enjoy!

Notes

For a milder version, omit the cayenne pepper. You can substitute smoked sausage with andouille sausage for a more authentic Cajun flavor.
