Instructions
In a large mixing bowl, combine the cottage cheese, eggs, sugar, salt, and vanilla extract (if using). Mix well until smooth.
Add the flour and baking powder to the bowl. Stir until just combined, being careful not to overmix.
Heat a non-stick skillet or griddle over medium heat. Add a small amount of butter or oil to grease the surface.
Spoon approximately 2-3 tablespoons of batter per pancake onto the skillet, spreading slightly into a round shape.
Cook for 2-3 minutes, or until bubbles form on the surface and the edges begin to set.
Flip the pancakes and cook for an additional 2-3 minutes, or until golden brown and cooked through.
Repeat with the remaining batter, adding more butter or oil as needed.
Serve warm with your favorite toppings such as honey, jam, fresh fruit, or powdered sugar.
Notes
For fluffier pancakes, avoid overmixing the batter. You can substitute whole wheat flour for a healthier option.
