  • In a large mixing bowl, combine the cottage cheese, eggs, sugar, salt, and vanilla extract (if using). Mix well until smooth.
  • Add the flour and baking powder to the bowl. Stir until just combined, being careful not to overmix.
  • Heat a non-stick skillet or griddle over medium heat. Add a small amount of butter or oil to grease the surface.
  • Spoon approximately 2-3 tablespoons of batter per pancake onto the skillet, spreading slightly into a round shape.
  • Cook for 2-3 minutes, or until bubbles form on the surface and the edges begin to set.
  • Flip the pancakes and cook for an additional 2-3 minutes, or until golden brown and cooked through.
  • Repeat with the remaining batter, adding more butter or oil as needed.
  • Serve warm with your favorite toppings such as honey, jam, fresh fruit, or powdered sugar.

Notes

For fluffier pancakes, avoid overmixing the batter. You can substitute whole wheat flour for a healthier option.
