Soak wooden skewers in water for at least 30 minutes to prevent burning, or use metal skewers.
In a bowl, whisk together the mayonnaise, sweet chili sauce, sriracha, honey, soy sauce, garlic powder, and smoked paprika until smooth. Reserve half of the sauce in a separate bowl for dipping later.
Season the chicken cubes with salt, pepper, and vegetable oil. Toss the chicken cubes in the remaining sauce until well-coated.
Thread the marinated chicken pieces onto the skewers, making sure not to overcrowd them.
Preheat a grill or grill pan over medium-high heat. Lightly oil the grates to prevent sticking.
Grill the chicken skewers for 8-10 minutes, turning occasionally, until the chicken is cooked through and has a nice char. Ensure the internal temperature reaches 165°F (74°C).
Remove the skewers from the grill and let them rest for a minute or two. Garnish with chopped cilantro, if desired.
Serve the Bang Bang Chicken Skewers with the reserved sauce for dipping.
Notes
For extra flavor, marinate the chicken in the sauce for 1-2 hours before grilling. Adjust the sriracha to your preferred spice level.
