  • Soak wooden skewers in water for at least 30 minutes to prevent burning, or use metal skewers.
  • In a bowl, whisk together the mayonnaise, sweet chili sauce, sriracha, honey, soy sauce, garlic powder, and smoked paprika until smooth. Reserve half of the sauce in a separate bowl for dipping later.
  • Season the chicken cubes with salt, pepper, and vegetable oil. Toss the chicken cubes in the remaining sauce until well-coated.
  • Thread the marinated chicken pieces onto the skewers, making sure not to overcrowd them.
  • Preheat a grill or grill pan over medium-high heat. Lightly oil the grates to prevent sticking.
  • Grill the chicken skewers for 8-10 minutes, turning occasionally, until the chicken is cooked through and has a nice char. Ensure the internal temperature reaches 165°F (74°C).
  • Remove the skewers from the grill and let them rest for a minute or two. Garnish with chopped cilantro, if desired.
  • Serve the Bang Bang Chicken Skewers with the reserved sauce for dipping.

Notes

For extra flavor, marinate the chicken in the sauce for 1-2 hours before grilling. Adjust the sriracha to your preferred spice level.
