  • In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
  • Beat in the egg and vanilla extract until well combined.
  • In another bowl, whisk together the flour, baking powder, and salt.
  • Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  • Roll the dough out on a floured surface to about 1/4 inch thick, then cut into circles using a cookie cutter.
  • Place the cookie rounds on a baking sheet lined with parchment paper and bake for 8-10 minutes, or until the edges are lightly golden.
  • Let the cookies cool completely on a wire rack.
  • In a medium bowl, beat together the softened cream cheese, powdered sugar, and vanilla extract until smooth and creamy.
  • Once the cookies are cool, spread a generous layer of the cream cheese frosting on each cookie.
  • Top each frosted cookie with an assortment of fresh fruits.
  • Garnish with mint leaves if desired, then serve immediately or refrigerate until ready to serve.
