Instructions
Preheat your oven to 350°F (175°C).
In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
Beat in the egg and vanilla extract until well combined.
In another bowl, whisk together the flour, baking powder, and salt.
Gradually add the dry ingredients to the wet mixture, mixing until just combined.
Roll the dough out on a floured surface to about 1/4 inch thick, then cut into circles using a cookie cutter.
Place the cookie rounds on a baking sheet lined with parchment paper and bake for 8-10 minutes, or until the edges are lightly golden.
Let the cookies cool completely on a wire rack.
In a medium bowl, beat together the softened cream cheese, powdered sugar, and vanilla extract until smooth and creamy.
Once the cookies are cool, spread a generous layer of the cream cheese frosting on each cookie.
Top each frosted cookie with an assortment of fresh fruits.
Garnish with mint leaves if desired, then serve immediately or refrigerate until ready to serve.
Notes
You can use any combination of fresh fruits for topping.
