Instructions
Preheat your oven to 350°F (175°C).
Roll out the sugar cookie dough on a lightly floured surface to form a large circle about 1/4 inch thick.
Transfer the rolled dough to a baking sheet lined with parchment paper and bake for 10-12 minutes or until lightly golden.
Allow the cookie crust to cool completely on the baking sheet after removing it from the oven.
In a mixing bowl, combine the softened cream cheese, powdered sugar, and vanilla extract. Beat until smooth and creamy.
Spread the cream cheese mixture evenly over the cooled cookie crust.
Arrange the mixed fresh fruit on top of the cream cheese layer in a colorful and appealing pattern.
If desired, warm the fruit preserves in a small saucepan until melted, then drizzle over the fruit for a shiny glaze.
Garnish with mint leaves, if using, and slice into wedges to serve.
Notes
You can use any combination of fresh fruit for the topping.
