  • Allow the cookie crust to cool completely on the baking sheet after removing it from the oven.
  • In a mixing bowl, combine the softened cream cheese, powdered sugar, and vanilla extract. Beat until smooth and creamy.
  • Spread the cream cheese mixture evenly over the cooled cookie crust.
  • Arrange the mixed fresh fruit on top of the cream cheese layer in a colorful and appealing pattern.
  • If desired, warm the fruit preserves in a small saucepan until melted, then drizzle over the fruit for a shiny glaze.
  • Garnish with mint leaves, if using, and slice into wedges to serve.
