Ingredients
  

  • 2 cups fresh strawberries, hulled and quartered
  • Unflavored gelatin powder
  • Cold water
  • Plain Greek yogurt
  • Erythritol or stevia blend
  • Vanilla extract
  • Lemon juice
  • Heavy cream (optional)
  • Protein powder (optional)

Instructions
 

  • Wash, hull, and quarter fresh strawberries, then place them in a blender.
  • Blend until smooth and strain puree through a fine-mesh sieve to remove seeds.
  • In a small saucepan, sprinkle gelatin over 1/4 cup cold water and let sit for 5 minutes.
  • Heat the saucepan over low heat, stirring until gelatin fully dissolves.
  • Pour dissolved gelatin into strawberry puree and add Greek yogurt, sweetener, vanilla extract, and lemon juice. Whisk thoroughly.
  • Refrigerate mixture for 20-30 minutes until slightly thickened around edges.
  • If using heavy cream, whip it in a separate bowl to soft peaks.
  • Gently fold the slightly thickened strawberry mixture into the whipped cream (if used) or whisk it if not.
  • Pour Strawberry Mousse into serving glasses and refrigerate for 2-4 hours or overnight until fully set.
  • Garnish with fresh strawberry slices or mint before serving.

Notes

Ensure to use ripe strawberries for best flavor and texture. Store in airtight containers in the refrigerator and consume within 3-4 days.
