Strawberry Horchata Agua Fresca

  • Rinse the uncooked white rice under cold water until the water runs clear, then place it in a bowl.
  • Add 4 cups of water to the bowl with the rice and allow it to soak for at least 4 hours or overnight for better flavor extraction.
  • Once the rice has soaked, drain the water and transfer the rice to a blender.
  • Add the fresh strawberries, 4 cups of cold water, whole milk (or almond milk), granulated sugar, vanilla extract, and ground cinnamon to the blender.
  • Blend the mixture on high until smooth and creamy, ensuring the rice and strawberries are fully broken down.
  • Strain the mixture through a fine-mesh sieve or cheesecloth into a large pitcher to remove any solids, pressing down gently to extract all the liquid.
  • Taste the strained mixture and adjust the sweetness with more sugar if needed.
  • Refrigerate the agua fresca for at least 1 hour to chill before serving.
  • Serve cold over ice cubes if desired, garnished with fresh strawberry slices or mint leaves.

Notes

For a vegan option, use almond milk instead of whole milk. Adjust the sugar to your preferred sweetness level.
