Instructions
In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
In a separate bowl, combine the milk, egg, vanilla extract, and melted butter. Whisk until smooth.
Gradually pour the wet ingredients into the dry ingredients, stirring until just combined. Avoid overmixing; the batter should be slightly lumpy.
Heat a non-stick skillet or griddle over medium heat and lightly grease with butter.
Pour about 1/4 cup of pancake batter onto the skillet. Allow the pancake to cook for 1-2 minutes or until bubbles form on the surface and the edges start to set.
Using a spatula, scramble the pancake into bite-sized pieces while itβs still soft. Stir and flip the pieces until fully cooked and golden brown, about 1-2 minutes more.
Transfer the scrambled pancake pieces to a serving plate and repeat the process with the remaining batter.
Serve warm with your favorite toppings, such as fresh fruits, maple syrup, honey, whipped cream, or chocolate chips.
Notes
For extra fluffiness, let the batter rest for 5 minutes before cooking. You can also experiment with different toppings to suit your taste.
