  • In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
  • In a separate bowl, combine the milk, egg, vanilla extract, and melted butter. Whisk until smooth.
  • Gradually pour the wet ingredients into the dry ingredients, stirring until just combined. Avoid overmixing; the batter should be slightly lumpy.
  • Heat a non-stick skillet or griddle over medium heat and lightly grease with butter.
  • Pour about 1/4 cup of pancake batter onto the skillet. Allow the pancake to cook for 1-2 minutes or until bubbles form on the surface and the edges start to set.
  • Using a spatula, scramble the pancake into bite-sized pieces while it’s still soft. Stir and flip the pieces until fully cooked and golden brown, about 1-2 minutes more.
  • Transfer the scrambled pancake pieces to a serving plate and repeat the process with the remaining batter.
  • Serve warm with your favorite toppings, such as fresh fruits, maple syrup, honey, whipped cream, or chocolate chips.

Notes

For extra fluffiness, let the batter rest for 5 minutes before cooking. You can also experiment with different toppings to suit your taste.
