Instructions
Preheat the oven to 350°F (175°C).
Roll out the sugar cookie dough on a floured surface and cut it into small rounds using a cookie cutter or glass.
Place the cookie rounds on a baking sheet lined with parchment paper and bake for 8-10 minutes, or until lightly golden.
While the cookies are cooling, in a medium bowl, beat together the softened cream cheese, powdered sugar, and vanilla extract until smooth and creamy.
Once the cookies are completely cooled, spread a generous layer of the cream cheese mixture on top of each cookie.
