  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
  • Add the egg and vanilla extract to the butter mixture, mixing until well combined.
  • In another bowl, whisk together the flour, baking powder, and salt.
  • Gradually add the dry ingredients to the wet ingredients, mixing until a dough forms.
  • Scoop tablespoon-sized portions of dough and place them on the prepared baking sheet, spacing them about 2 inches apart.
  • Flatten each dough ball slightly with the palm of your hand.
  • Bake in the preheated oven for 10-12 minutes or until the edges are lightly golden.
  • Remove from the oven and let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
  • In a small bowl, mix together the softened cream cheese, powdered sugar, and vanilla extract until smooth and creamy.
  • Once the cookies are completely cooled, spread a layer of the cream cheese mixture on top of each cookie.
  • Decorate the cookies with blueberries, sliced strawberries, and raspberries to create a festive red, white, and blue design.
  • Serve immediately or refrigerate until ready to enjoy!
