Instructions
Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
Add the egg and vanilla extract to the butter mixture, mixing until well combined.
In another bowl, whisk together the flour, baking powder, and salt.
Gradually add the dry ingredients to the wet ingredients, mixing until a dough forms.
Scoop tablespoon-sized portions of dough and place them on the prepared baking sheet, spacing them about 2 inches apart.
Flatten each dough ball slightly with the palm of your hand.
Bake in the preheated oven for 10-12 minutes or until the edges are lightly golden.
Remove from the oven and let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
In a small bowl, mix together the softened cream cheese, powdered sugar, and vanilla extract until smooth and creamy.
Once the cookies are completely cooled, spread a layer of the cream cheese mixture on top of each cookie.
Decorate the cookies with blueberries, sliced strawberries, and raspberries to create a festive red, white, and blue design.
Serve immediately or refrigerate until ready to enjoy!
Notes
For a fun twist, you can add other fruits or use flavored cream cheese.
