Ingredients
  

  • 1 ½ cups whole wheat graham cracker crumbs
  • ¼ cup unsalted butter, melted
  • 2 tablespoons coconut sugar
  • ½ teaspoon ground cinnamo
  • 16 ounces light cream cheese, softened
  • 1 cup plain Greek yogurt
  • 1 cup powdered erythritol
  • 2 tablespoons unsweetened cocoa powder
  • 2 teaspoons pure vanilla extract
  • 1-2 teaspoons natural red food coloring
  • ½ cup unsweetened almond milk
  • 1 teaspoon apple cider vinegar
  • 8 ounces light cream cheese, softened (for topping)
  • ½ cup powdered erythritol (for topping)
  • 1 teaspoon pure vanilla extract (for topping)
  • 8 ounces light whipped topping
  • Approximately 12-15 whole wheat graham cracker sheets, unbroken (for layering)
  • Shaved dark chocolate or cocoa powder (for garnish)

Instructions
 

  • Prepare the Graham Cracker Crust: Combine the graham cracker crumbs, melted butter, coconut sugar, and cinnamon. Press mixture into a 9x13 inch baking dish. Chill in the refrigerator.
  • Make the Red Velvet Cream Cheese Filling: Beat the cream cheese until smooth, then add Greek yogurt, powdered erythritol, cocoa powder, vanilla extract, and apple cider vinegar. Mix until smooth. Gradually add the red food coloring and almond milk, mixing until fluffy.
  • Prepare the Whipped Topping: In a clean bowl, beat light cream cheese until smooth. Add powdered erythritol and vanilla extract, then fold in whipped topping until airy.
  • Assemble the First Layer: Use whole wheat graham cracker sheets to cover the chilled crust.
  • Layer with Red Velvet Filling: Spread half of the red velvet cream cheese filling over the graham crackers.
  • Add Another Graham Cracker Layer: Place another layer of graham cracker sheets over the filling.
  • Spread Remaining Red Velvet Filling: Carefully spread the remaining filling over this layer.
  • Top with Whipped Topping: Spread the whipped topping over the last layer smoothly.
  • Garnish (Optional): Sprinkle with shaved dark chocolate or cocoa powder.
  • Chill Thoroughly: Cover the dessert and refrigerate for at least 6-8 hours, preferably overnight.
  • Serve and Enjoy: Slice and serve cold.
