Instructions
Boil a large pot of salted water and cook the pasta according to package instructions until al dente. Reserve 1/4 cup of pasta water before draining.
While the pasta cooks, heat the olive oil in a large skillet over medium heat.
Add the minced garlic and sauté for 1-2 minutes until fragrant, being careful not to burn it.
Add the chopped spinach to the skillet and cook for 2-3 minutes, stirring occasionally, until wilted.
Season the spinach with salt, black pepper, and red pepper flakes (if using).
Reduce the heat to low and stir in the heavy cream (optional) and reserved pasta water to create a light sauce.
Add the cooked pasta to the skillet and toss to combine with the spinach and sauce.
Sprinkle the grated Parmesan cheese over the pasta and toss again to evenly coat.
Serve immediately, garnished with additional Parmesan cheese or red pepper flakes, if desired.
Notes
You can substitute kale for spinach or use a dairy-free alternative for the cream and Parmesan cheese.
