Instructions
Preheat the oven to 350°F (175°C).
Roll out the sugar cookie dough on a parchment-lined baking sheet to form a large circle, about 1/4 inch thick.
Bake the cookie for 10-12 minutes or until lightly golden. Allow it to cool completely.
In a mixing bowl, beat the softened cream cheese, powdered sugar, and vanilla extract until smooth and creamy.
Spread the cream cheese mixture evenly over the cooled cookie crust.
Arrange the sliced strawberries, blueberries, kiwi, and raspberries on top of the cream cheese layer in a festive pattern.
If desired, warm the apricot jam in the microwave until it becomes liquid and brush it over the fruit for a shiny glaze.
Chill the fruit pizza in the refrigerator for at least 30 minutes before serving. Slice and enjoy!
