Cake:
- 2 ½ cups all-purpose flour
- 2 tablespoons cocoa powder
- 1 ¾ cups granulated sugar
- ½ cup unsalted butter softened
- 1 cup buttermilk
- 2 large eggs
- 2 teaspoons purple food coloring or adjust for preferred hue
- 1 teaspoon vanilla extract
- 1 teaspoon white vinegar
- 1 teaspoon baking soda
- ½ teaspoon salt
Cream Cheese Frosting:
- 8 ounces cream cheese softened
- ½ cup unsalted butter softened
- 3 ½ cups powdered sugar
- 1 teaspoon vanilla extract
- A drop of purple food coloring optional for lilac frosting
Preheat your oven to 350°F (175°C). Grease and flour two 8-inch round cake pans.
In a large bowl, cream the butter and sugar until light and fluffy. Add the eggs one at a time, mixing well after each addition. Stir in vanilla extract and purple food coloring.
In a separate bowl, sift together the flour, cocoa powder, and salt. Gradually add the dry ingredients to the wet ingredients, alternating with buttermilk, beginning and ending with the dry mixture.
Mix baking soda and vinegar in a small bowl (it will fizz). Quickly fold it into the batter.
Divide the batter evenly between the prepared pans and bake for 25–30 minutes, or until a toothpick inserted into the center comes out clean. Let the cakes cool completely.
For the frosting, beat the cream cheese and butter until smooth. Gradually add powdered sugar and vanilla extract, beating until fluffy. Add a drop of purple food coloring for a lilac tint, if desired.
Spread the frosting between the layers and over the cake. Decorate as desired.
