Ingredients
  

  • 1 cup all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/4 cup unsalted butter softened
  • 1/2 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 cup red sprinkles
  • 1/2 cup blue sprinkles
  • 1 pint vanilla ice cream
  • 1/2 cup whipped cream optional
  • Fresh strawberries and blueberries for garnish

Instructions
 

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a bowl, whisk together the flour, baking soda, and salt; set aside.
  • In a separate bowl, cream together the softened butter and granulated sugar until light and fluffy.
  • Beat in the egg and vanilla extract until well combined.
  • Gradually add the dry ingredients to the butter mixture and mix until just incorporated.
  • Scoop tablespoon-sized portions of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  • Gently press the tops of the cookies with your fingers, then sprinkle red sprinkles on half of the cookies and blue sprinkles on the other half.
  • Bake in the preheated oven for 8-10 minutes or until the edges are lightly golden. Let cool completely on a wire rack.
  • Once the cookies are cooled, spread a generous scoop of vanilla ice cream on the flat side of one cookie, then top with another cookie to form a sandwich.
  • Repeat with the remaining cookies and ice cream.
  • For an extra festive touch, pipe whipped cream on top of each sandwich and garnish with fresh strawberries and blueberries.

Notes

You can use any color sprinkles to match your theme. For a richer flavor, consider using chocolate ice cream instead of vanilla.
