Instructions
Preheat the oven to 350°F (175°C).
On a parchment-lined baking sheet, roll out the sugar cookie dough into a large circle, about 1/4 inch thick.
Bake the cookie base in the preheated oven for 10-12 minutes, or until golden brown. Allow it to cool completely.
In a mixing bowl, combine the softened cream cheese, powdered sugar, and vanilla extract. Beat until smooth and creamy.
Spread the cream cheese mixture evenly over the cooled cookie base.
In a separate bowl, toss the sliced strawberries, blueberries, and banana with lemon juice to prevent browning.
Arrange the mixed fruit decoratively on top of the cream cheese layer, creating a festive design.
Optionally, sprinkle red currants and sliced almonds over the top for added color and crunch.
Slice the mini fruit pizza into wedges and serve immediately or refrigerate until ready to serve.
Notes
For a healthier option, consider using a whole grain cookie dough.
