Instructions
Preheat a non-stick skillet over medium heat.
In a bowl, whisk together the eggs, milk, salt, and black pepper until well combined.
Add the butter to the skillet and allow it to melt completely.
Dip one side of each bread slice into the egg mixture, ensuring it is well-coated.
Place the egg-dipped bread slices onto the skillet, egg side down, and cook for 1 minute.
Pour any remaining egg mixture into the skillet, cooking it like a scrambled egg next to the bread slices.
Sprinkle the shredded cheddar cheese over the scrambled eggs, followed by the diced tomato and spinach leaves (if using).
Fold the scrambled eggs over into a neat pile and let the cheese melt for about 1 minute.
Stack the cheesy scrambled eggs onto one bread slice and top with the second bread slice to form a sandwich.
Optional: Sprinkle paprika on top for extra flavor.
Serve warm and enjoy your lazy day breakfast!
