  • Sprinkle the shredded cheddar cheese over the scrambled eggs, followed by the diced tomato and spinach leaves (if using).
  • Fold the scrambled eggs over into a neat pile and let the cheese melt for about 1 minute.
  • Stack the cheesy scrambled eggs onto one bread slice and top with the second bread slice to form a sandwich.
