Heat olive oil in a large skillet over medium heat.
Add the ground turkey to the skillet, breaking it apart with a wooden spoon or spatula. Cook for 5-7 minutes, stirring occasionally, until the turkey is browned and cooked through.
Push the turkey to one side of the skillet and add the minced garlic to the empty space. Cook for 30 seconds, stirring, until fragrant.
In a small bowl, whisk together honey, soy sauce, rice vinegar, sesame oil, ground black pepper, and red pepper flakes (if using).
Pour the honey garlic sauce over the cooked turkey and stir to coat evenly. Simmer for 2-3 minutes, allowing the sauce to thicken slightly.
Remove the skillet from heat and garnish with sliced green onions and sesame seeds, if desired.
Serve immediately over rice, noodles, or steamed vegetables for a complete meal.
Notes
For extra flavor, you can add a splash of lime juice or sprinkle crushed peanuts on top. Adjust the red pepper flakes to your preferred spice level.
