Cook the basmati or jasmine rice according to package instructions and set aside.
In a medium bowl, combine the chicken pieces with garlic powder, paprika, black pepper, and salt. Mix well to coat the chicken evenly with the seasoning.
Heat olive oil in a large skillet or non-stick pan over medium-high heat. Add the seasoned chicken pieces and cook for 5-7 minutes, stirring occasionally, until the chicken is golden brown and cooked through.
In a small bowl, whisk together the BBQ sauce, honey, soy sauce, apple cider vinegar, and chicken broth until well combined.
Reduce the heat to medium-low and pour the BBQ sauce mixture over the cooked chicken in the skillet. Stir to coat the chicken evenly in the sauce. Simmer for 3-4 minutes until the sauce thickens slightly and coats the chicken well.
Serve the cooked rice on a plate or in bowls. Spoon the honey BBQ chicken over the rice.
Optionally, garnish with chopped parsley and green onions for added freshness and flavor.
Notes
You can substitute chicken thighs for chicken breasts for a juicier texture. Adjust the sweetness of the sauce by adding more or less honey to taste.
