  • Cook the basmati or jasmine rice according to package instructions and set aside.
  • In a medium bowl, combine the chicken pieces with garlic powder, paprika, black pepper, and salt. Mix well to coat the chicken evenly with the seasoning.
  • Heat olive oil in a large skillet or non-stick pan over medium-high heat. Add the seasoned chicken pieces and cook for 5-7 minutes, stirring occasionally, until the chicken is golden brown and cooked through.
  • In a small bowl, whisk together the BBQ sauce, honey, soy sauce, apple cider vinegar, and chicken broth until well combined.
  • Reduce the heat to medium-low and pour the BBQ sauce mixture over the cooked chicken in the skillet. Stir to coat the chicken evenly in the sauce. Simmer for 3-4 minutes until the sauce thickens slightly and coats the chicken well.
  • Serve the cooked rice on a plate or in bowls. Spoon the honey BBQ chicken over the rice.
  • Optionally, garnish with chopped parsley and green onions for added freshness and flavor.

Notes

You can substitute chicken thighs for chicken breasts for a juicier texture. Adjust the sweetness of the sauce by adding more or less honey to taste.
