In a small bowl, whisk together honey, BBQ sauce, and soy sauce until smooth.
Pour the honey BBQ sauce mixture over the cooked chicken in the skillet. Reduce heat to low and simmer for 3-4 minutes, stirring occasionally, until the sauce thickens and fully coats the chicken.
Reheat the cooked white rice if necessary and divide it onto serving plates.
Spoon the honey BBQ chicken over the rice and garnish with chopped green onions, if desired.
