  • Preheat the oven to 350°F (175°C).
  • Press the sugar cookie dough evenly into the bottom of a pizza pan or a large baking sheet to form the crust.
  • Bake in the preheated oven for 12-15 minutes or until the edges are lightly golden. Let the crust cool completely.
  • In a medium mixing bowl, combine the softened cream cheese, powdered sugar, and vanilla extract. Beat until smooth and creamy.
  • Fold in the whipped topping until well blended.
  • Spread the cream cheese mixture evenly over the cooled cookie crust.
  • Arrange the sliced strawberries, kiwifruit, blueberries, and pineapple chunks on top of the cream cheese layer in a decorative pattern.
  • If desired, warm the apricot preserves in a small saucepan until it becomes liquid, then brush it over the fruit for added shine.
  • Refrigerate the fruit pizza for at least 30 minutes before slicing and serving.
