Instructions
Preheat the oven to 350°F (175°C).
Press the sugar cookie dough evenly into the bottom of a pizza pan or a large baking sheet to form the crust.
Bake in the preheated oven for 12-15 minutes or until the edges are lightly golden. Let the crust cool completely.
In a medium mixing bowl, combine the softened cream cheese, powdered sugar, and vanilla extract. Beat until smooth and creamy.
Fold in the whipped topping until well blended.
Spread the cream cheese mixture evenly over the cooled cookie crust.
Arrange the sliced strawberries, kiwifruit, blueberries, and pineapple chunks on top of the cream cheese layer in a decorative pattern.
If desired, warm the apricot preserves in a small saucepan until it becomes liquid, then brush it over the fruit for added shine.
Refrigerate the fruit pizza for at least 30 minutes before slicing and serving.
