  • Roll out the sugar cookie dough on a baking sheet to form a large circle, about 1/4 inch thick.
  • Bake in the preheated oven for 10-12 minutes, or until golden brown. Let cool completely.
  • In a mixing bowl, combine the softened cream cheese, powdered sugar, and vanilla extract. Mix until smooth and creamy.
  • Fold in the whipped topping until well combined.
  • Spread the cream cheese mixture evenly over the cooled cookie crust.
  • Arrange the sliced strawberries, kiwi, blueberries, and mandarin oranges on top of the cream cheese layer in a decorative pattern.
  • In a small saucepan, heat the fruit preserves over low heat until melted, then brush it over the fruit to give it a glossy finish.
  • Refrigerate the fruit pizza for at least 30 minutes before serving. Slice and enjoy!
