Instructions
Preheat the oven to 350°F (175°C).
Roll out the sugar cookie dough on a baking sheet to form a large circle, about 1/4 inch thick.
Bake in the preheated oven for 10-12 minutes, or until golden brown. Let cool completely.
In a mixing bowl, combine the softened cream cheese, powdered sugar, and vanilla extract. Mix until smooth and creamy.
Fold in the whipped topping until well combined.
Spread the cream cheese mixture evenly over the cooled cookie crust.
Arrange the sliced strawberries, kiwi, blueberries, and mandarin oranges on top of the cream cheese layer in a decorative pattern.
In a small saucepan, heat the fruit preserves over low heat until melted, then brush it over the fruit to give it a glossy finish.
Refrigerate the fruit pizza for at least 30 minutes before serving. Slice and enjoy!
