  • In a medium bowl, whisk together the flour, baking soda, and salt; set aside.
  • In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  • Beat in the egg and vanilla extract until well combined.
  • Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  • Drop rounded tablespoons of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  • Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden. Allow to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
  • In a separate bowl, beat together the softened cream cheese, powdered sugar, and vanilla extract until smooth and creamy.
  • Once the cookies have cooled, spread a generous layer of cream cheese frosting on each cookie.
  • Top each frosted cookie with assorted fresh fruits and garnish with mint leaves if desired.
