If using a sugar cookie dough log, slice it into 1/4-inch rounds and place them on a greased pizza pan, or press the dough from the sugar cookie mix into the bottom of the pan to form a crust.
Bake the cookie crust for 10-12 minutes or until golden brown. Remove from the oven and let cool completely.
In a medium bowl, beat together the softened cream cheese, powdered sugar, and vanilla extract until smooth and creamy.
Fold in the whipped topping gently until well combined.
Spread the cream cheese mixture evenly over the cooled cookie crust.
Arrange the sliced strawberries, kiwi, blueberries, and mandarin oranges on top of the cream cheese layer in a decorative pattern.
If using, brush the fruit glaze over the top of the fruit to give it a shiny finish.
Refrigerate the fruit pizza for at least 1 hour before slicing and serving.
