Instructions
In a large mixing bowl, combine the corn, diced bell pepper, diced red onion, and cherry tomatoes.
In a separate bowl, whisk together the mayonnaise, sour cream, lime juice, chili powder, salt, and pepper until smooth.
Pour the dressing over the vegetable mixture and toss until everything is well coated.
Gently fold in the shredded cheddar cheese and Fritos corn chips until evenly distributed.
Chill the salad in the refrigerator for at least 30 minutes before serving.
Garnish with chopped cilantro if desired and serve cold.
