Instructions
Preheat the oven to 350°F (175°C).
On a baking sheet lined with parchment paper, spread the sugar cookie dough into a round pizza shape, about 12 inches in diameter.
Bake the sugar cookie crust in the preheated oven for 10-12 minutes or until lightly golden. Allow it to cool completely.
In a mixing bowl, beat the softened cream cheese, powdered sugar, and vanilla extract until smooth and creamy.
Once the cookie crust has cooled, spread the cream cheese mixture evenly over the top.
Arrange the sliced strawberries, blueberries, and banana slices on top of the cream cheese layer to create a flag pattern.
If desired, warm the apricot preserves in a small saucepan until melted, then brush it over the fruit for a nice glaze.
Refrigerate the fruit pizza for at least 30 minutes before serving.
Garnish with fresh mint leaves if desired, slice, and enjoy your festive flag fruit pizza!
