  • Preheat the oven to 350°F (175°C).
  • On a baking sheet lined with parchment paper, spread the sugar cookie dough into a round pizza shape, about 12 inches in diameter.
  • Bake the sugar cookie crust in the preheated oven for 10-12 minutes or until lightly golden. Allow it to cool completely.
  • In a mixing bowl, beat the softened cream cheese, powdered sugar, and vanilla extract until smooth and creamy.
  • Once the cookie crust has cooled, spread the cream cheese mixture evenly over the top.
  • Arrange the sliced strawberries, blueberries, and banana slices on top of the cream cheese layer to create a flag pattern.
  • If desired, warm the apricot preserves in a small saucepan until melted, then brush it over the fruit for a nice glaze.
  • Refrigerate the fruit pizza for at least 30 minutes before serving.
  • Garnish with fresh mint leaves if desired, slice, and enjoy your festive flag fruit pizza!
