Easy Patriotic Mini Ice Cream Sandwich Pops
These festive mini ice cream sandwich pops are perfect for celebrating any patriotic occasion. Easy to make and fun to eat!
Ingredients
- 12 mini chocolate chip cookies
- 1 cup vanilla ice cream
- 1/2 cup red sprinkles
- 1/2 cup blue sprinkles
- 12 wooden popsicle sticks
- 1 cup white chocolate chips optional for coating
Instructions
- Take one mini chocolate chip cookie and place a small scoop of vanilla ice cream on the flat side.
- Top it with another mini cookie to create a sandwich.
- Insert a wooden popsicle stick into the center of each ice cream sandwich.
- Place the sandwiches on a parchment-lined baking sheet and freeze for at least 1 hour to firm up.
- If using, melt white chocolate chips in a microwave-safe bowl in 30-second intervals until smooth.
- Dip each frozen ice cream sandwich into the melted white chocolate, letting the excess drip off.
- Immediately roll the sides of the sandwiches in red and blue sprinkles to create a patriotic look.
- Return the decorated sandwiches to the baking sheet and freeze for another 30 minutes to set.
- Serve chilled and enjoy your festive treat!

You can use any type of sprinkles for decoration, but red and blue give a patriotic touch.
