mini chocolate chip cookies

red sprinkles

wooden popsicle sticks

Instructions
Take one mini chocolate chip cookie and place a small scoop of vanilla ice cream on the flat side.
Top it with another mini cookie to create a sandwich.
Insert a wooden popsicle stick into the center of each ice cream sandwich.
Place the sandwiches on a parchment-lined baking sheet and freeze for at least 1 hour to firm up.
If using, melt white chocolate chips in a microwave-safe bowl in 30-second intervals until smooth.
Dip each frozen ice cream sandwich into the melted white chocolate, letting the excess drip off.
Immediately roll the sides of the sandwiches in red and blue sprinkles to create a patriotic look.
Return the decorated sandwiches to the baking sheet and freeze for another 30 minutes to set.
Serve chilled and enjoy your festive treat!
Notes
You can use any type of sprinkles for decoration, but red and blue give a patriotic touch.
