Instructions
Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or grease with cooking spray.
In a large mixing bowl, whisk together the flour, baking powder, salt, and sugar until well combined.
In a separate bowl, beat the egg and then add the milk, vegetable oil, and vanilla extract. Mix until smooth.
Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix.
Fold in the chocolate chips if using.
Spoon the batter into the prepared muffin tin, filling each cup about 2/3 full.
Bake in the preheated oven for 15-18 minutes, or until a toothpick inserted into the center comes out clean.
Allow the pancakes muffins to cool in the tin for 5 minutes before transferring them to a wire rack.
Serve warm with maple syrup if desired.
Notes
You can customize these muffins by adding fruits or nuts as desired.
