Instructions
Prepare a baking sheet by lining it with parchment paper or a silicone baking mat.
In a microwave-safe bowl, melt the chocolate chips and butter in 30-second increments, stirring after each interval until smooth.
Stir in the vanilla extract to the melted chocolate mixture.
In a large mixing bowl, combine the crispy rice cereal and shredded coconut.
Pour the melted chocolate mixture over the cereal and coconut, stirring gently until fully coated.
Scoop spoonfuls of the mixture onto the prepared baking sheet and shape them into small nest shapes using your hands or the back of a spoon.
Press a few candy-coated chocolate eggs or jelly beans into the center of each nest while the mixture is still soft.
Refrigerate the nests for 30 minutes or until fully set.
Notes
You can substitute shredded coconut with crushed nuts or omit it entirely if preferred. Use any candy or jelly beans that fit your dietary needs.
