  • 1 cup milk
  • 1/4 cup vegetable oil
  • 1 tsp vanilla extract
  • 1/2 cup chopped pecans
  • Cooking spray or additional oil for the waffle maker

Instructions
 

  • Preheat your mini waffle maker according to the manufacturer's instructions.
  • In a mixing bowl, whisk together the whole wheat flour, baking powder, salt, and brown sugar until well combined.
  • In a separate bowl, beat the egg and then add the milk, vegetable oil, and vanilla extract. Mix until smooth.
  • Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix; a few lumps are okay.
  • Fold in the chopped pecans gently into the batter.
  • Lightly grease the waffle maker with cooking spray or oil.
  • Pour a small amount of batter onto the preheated waffle maker, enough to cover the surface but not overflow.
  • Close the waffle maker and cook for about 3-5 minutes, or until the waffles are golden brown and cooked through.
  • Remove the waffles and repeat with the remaining batter, greasing the waffle maker as needed.
  • Serve warm with maple syrup, fresh fruit, or your favorite toppings.
