In a sturdy glass or cocktail shaker, combine the fresh mint leaves and honey or agave syrup.
Using a muddler or the back of a spoon, gently press the mint leaves to release their flavor. Be careful not to over-muddle as this can make the mint bitter.
Add the coconut cream, fresh lime juice, and coconut water to the glass or shaker. Stir or shake until well combined.
Fill a serving glass with ice cubes, then pour the coconut lime mixture over the ice.
Top with sparkling water or club soda for fizz, stirring gently to combine.
Garnish with extra mint leaves and lime slices, if desired, and serve immediately.

For a sweeter drink, increase the honey or agave syrup. Adjust lime juice to taste for a more tart flavor.
