Preheat your grill to medium heat (around 350°F or 175°C).
In a microwave-safe bowl, melt the butter and semi-sweet chocolate chips together in 20-second intervals, stirring each time, until smooth.
Add the granulated sugar and brown sugar to the melted mixture and stir until combined.
Whisk in the eggs one at a time, followed by the vanilla extract.
In a separate bowl, sift together the flour, cocoa powder, baking powder, and salt.
Gradually fold the dry ingredients into the wet mixture until just combined, being careful not to overmix.
Grease a grill-safe pan or skillet with vegetable oil and pour the brownie batter into it, spreading it evenly.
Place the pan on the preheated grill and close the lid. Cook for 15-20 minutes, checking occasionally, until the edges are set and the center is slightly gooey. Avoid overcooking to retain a fudgy texture.
Carefully remove the pan from the grill and let the brownies cool for 10 minutes.
Cut the brownies into bite-sized pieces and serve warm. Optionally, top with powdered sugar, chocolate syrup, or fresh fruit.
Notes
For best results, use a grill-safe pan and monitor the cooking time closely to avoid overcooking.
