Ingredients
  

  • 2 cups Plain Greek Yogurt
  • 1 cup Fresh Blueberries
  • 2-3 tablespoons Honey or Maple Syrup
  • 1 teaspoon Vanilla Extract
  • 1/4 cup Rolled Oats (optional)
  • Pinch of Salt

Instructions
 

  • Line a standard 12-cup muffin tin with paper or silicone liners.
  • Optional: Simmer half of the blueberries in a small saucepan with water until they start to burst, then let them cool.
  • In a large bowl, whisk together the Greek yogurt, honey or maple syrup, vanilla extract, and salt until smooth.
  • Fold in the fresh blueberries and optional rolled oats gently.
  • Distribute the mixture evenly into the muffin liners, filling each about three-quarters full.
  • Chill in the refrigerator for at least 3-4 hours, preferably overnight, until set.
  • Remove from the muffin tin, peel off the liners, and serve immediately.

Notes

Store leftovers in an airtight container in the refrigerator for 3-4 days, or freeze for up to 1 month. Use fresh or thawed, pat-dried frozen blueberries.
