Ingredients

  • 1 medium Green Cabbage
  • 2 tablespoons Olive Oil
  • 1 tablespoon Apple Cider Vinegar
  • 1 tablespoon Soy Sauce or Tamari
  • 1 teaspoon Smoked Paprika
  • ½ teaspoon Garlic Powder
  • ¼ teaspoon Black Pepper
  • Pinch of Red Pepper Flakes (optional)
  • Fresh Parsley or Cilantro (for garnish)
  • Lemon Wedges (for serving)

Instructions

  • Remove any loose or damaged outer leaves from the cabbage. Slice the cabbage into thick, ¾ to 1-inch 'steaks' or rounds.
  • In a large mixing bowl, combine the olive oil, apple cider vinegar, soy sauce, smoked paprika, garlic powder, black pepper, and red pepper flakes. Whisk until well combined.
  • Gently place the cabbage steaks into the bowl with the sauce and flip to coat each side. Marinate for at least 5-10 minutes.
  • Heat a large heavy-bottomed skillet over medium-high heat until hot. If necessary, add a tiny splash of oil.
  • Place the cabbage steaks into the hot skillet in a single layer. Cook undisturbed for 4-6 minutes until the bottom is deeply golden brown and blistered.
  • Using tongs, carefully flip each steak. Cook on the second side for another 4-6 minutes until blistered and tender.
  • Transfer to a serving platter, garnish with fresh parsley or cilantro, and serve with lemon wedges.

Notes

Avoid overcrowding the pan to ensure optimal blistering. Make sure to preheat your pan for best results.
