  • Preheat your oven to 375°F (190°C) and lightly grease a 9x13-inch baking dish.
  • In a large skillet over medium heat, cook the ground beef until browned and fully cooked, breaking it up with a spatula as it cooks. Drain any excess fat.
  • Stir the taco seasoning into the cooked beef, then add 1/3 cup of the enchilada sauce. Mix well and remove from heat.
  • Spoon 2-3 tablespoons of the beef mixture into each tortilla, sprinkle a bit of shredded cheddar cheese on top, and roll tightly. Place the rolled tortillas seam-side down in the prepared baking dish.
  • Pour the remaining enchilada sauce evenly over the rolled tortillas and sprinkle the remaining shredded cheese on top.
  • Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbling.
  • Remove from the oven and let cool slightly before serving. Enjoy!

Notes

You can substitute ground turkey for ground beef or use a different type of cheese, such as Monterey Jack.
