Preheat your oven to 375°F (190°C) and lightly grease a 9x13-inch baking dish.
In a large skillet over medium heat, cook the ground beef until browned and fully cooked, breaking it up with a spatula as it cooks. Drain any excess fat.
Stir the taco seasoning into the cooked beef, then add 1/3 cup of the enchilada sauce. Mix well and remove from heat.
Spoon 2-3 tablespoons of the beef mixture into each tortilla, sprinkle a bit of shredded cheddar cheese on top, and roll tightly. Place the rolled tortillas seam-side down in the prepared baking dish.
Pour the remaining enchilada sauce evenly over the rolled tortillas and sprinkle the remaining shredded cheese on top.
Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbling.
Remove from the oven and let cool slightly before serving. Enjoy!
Notes
You can substitute ground turkey for ground beef or use a different type of cheese, such as Monterey Jack.
