Instructions

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a medium bowl, whisk together the flour, baking powder, baking soda, and salt; set aside.
  • In a large bowl, beat the softened butter, granulated sugar, and brown sugar together until creamy.
  • Add the egg and vanilla extract to the butter mixture and beat until well combined.
  • Gradually mix the dry ingredient mixture into the wet ingredients until just combined.
  • Scoop tablespoon-sized portions of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  • Bake in the preheated oven for 8-10 minutes or until the edges are lightly golden.
  • Remove from the oven and allow the cookies to cool completely on a wire rack.
  • In a separate bowl, combine the softened cream cheese, powdered sugar, and vanilla extract, mixing until smooth.
  • Once the cookies are cool, spread a layer of the cream cheese mixture on top of each cookie.
  • Toss the mixed fresh fruits with lemon juice to prevent browning, then arrange them on top of the frosted cookies.
  • Serve immediately or refrigerate until ready to serve.

Notes

For a colorful presentation, use a variety of fruits. You can also substitute the cream cheese with yogurt for a lighter option.
