orange marmalade

Instructions
Heat a large skillet or wok over medium-high heat and add a drizzle of oil.
Add the chicken pieces to the skillet and cook, stirring occasionally, until fully cooked and golden brown, about 6-8 minutes.
In a small bowl, whisk together the orange marmalade and soy sauce until smooth.
Reduce the heat to medium, pour the sauce mixture over the cooked chicken, and stir to coat evenly.
Simmer for 3-5 minutes, stirring occasionally, until the sauce thickens and clings to the chicken.
Serve immediately over rice or alongside steamed vegetables, if desired.
Notes
You can substitute orange marmalade with apricot jam for a slightly different flavor.
