  • Heat a large skillet or wok over medium-high heat and add a drizzle of oil.
  • Add the chicken pieces to the skillet and cook, stirring occasionally, until fully cooked and golden brown, about 6-8 minutes.
  • In a small bowl, whisk together the orange marmalade and soy sauce until smooth.
  • Reduce the heat to medium, pour the sauce mixture over the cooked chicken, and stir to coat evenly.
  • Simmer for 3-5 minutes, stirring occasionally, until the sauce thickens and clings to the chicken.
  • Serve immediately over rice or alongside steamed vegetables, if desired.

Notes

You can substitute orange marmalade with apricot jam for a slightly different flavor.
