Instructions

  • Preheat your oven to 350Β°F (175Β°C). Grease and flour two 8-inch round cake pans.
  • In a large bowl, cream the butter and sugar until light and fluffy. Add the eggs one at a time, mixing well after each addition. Stir in vanilla extract and purple food coloring.
  • In a separate bowl, sift together the flour, cocoa powder, and salt. Gradually add the dry ingredients to the wet ingredients, alternating with buttermilk, beginning and ending with the dry mixture.
  • Mix baking soda and vinegar in a small bowl (it will fizz). Quickly fold it into the batter.
  • Divide the batter evenly between the prepared pans and bake for 25–30 minutes, or until a toothpick inserted into the center comes out clean. Let the cakes cool completely.
  • For the frosting, beat the cream cheese and butter until smooth. Gradually add powdered sugar and vanilla extract, beating until fluffy. Add a drop of purple food coloring for a lilac tint, if desired.
  • Spread the frosting between the layers and over the cake. Decorate as desired.

Notes

  • For a natural purple color, substitute food coloring with purple sweet potato powder or butterfly pea flower extract.
